"Gourmellows" Gourmet Vegan Marshmallow Bars

Over a year and half ago, when I switch to a strict vegetarian diet, my first concern was "how I am going to turn all my recipes into vegan ones?". It took quite a few weeks of experimentation, frustration and those "Eureka!  More (+)

" moments, and in the end the first of my vegan confections came to life. It was a layer of fluffy vanilla marshmallow topped with a layer of vegan ganache. So the Gourmellow was born. Half Marshamllow, Half Truffle, Whole Deliciousness.
Keep refrigerated, enjoy at room temperature.
