Parmesan Mediterranean Roasted Acorn Squash

Make Thanksgiving a little more exotic this year with this wonderful roasted acorn squash dish that incorporates Urban Accents Parmesan Mediterranean Veggie Roaster mix. The combination of fragrant seasonings like rosemary, thyme, garlic and Parmesan cheese brings out delicious flavors in any vegetables you roast. In this case, acorn squash (you could you butternut squash, too) thrives.

Parmesan Mediterranean Roasted Acorn Squash Recipe

Ingredients:

Instructions:

  1. Preheat oven to 350°F. 
  2. Cut squash in half lengthwise, remove seeds, then cut into half-moon slices, about 1/2-inch thick. Place in a single layer on a rimmed baking sheet. 
  3. In a small bowl, combine olive oil, melted butter and seasoning. 
  4. Drizzle over squash slices and toss to coat on all sides. 
  5. Roast for 25 minutes or until tender, turning halfway through roasting.
