Slow Cook Shrimp & Brown Rice Gumbo

Laissez les bons temps rouler! It's Fat Tuesday ... time to cook up a healthy batch of slow cooker shrimp and brown rice gumbo! Our friends over at HerbNZest sent us this delicious and healthy recipe and we couldn't wait to share it. What better way to celebrate Mardi Gras (other than heading down to New Orleans and jumping into the festivities) than by having a classic dish? 

Slow Cook Shrimp & Brown Rice Gumbo

Serves: 4

Ingredients:

Instructions:

  1. In a slow cooker, sauté onions and garlic in olive oil until yellow. 
  2. Add bay leaves and spices and sauté for 30 seconds. 
  3. Add remaining ingredients into slow cooker and cook in medium heat for about 1 hour. 
  4. Then turn to low heat and cook further, allowing the water to dry up. 
  5. Check every 20 minutes by poking with a fork to see that the rice and lentils are fully cooked. 
  6. Serve hot!
